What are the characteristics of Vietnamese cuisine?

Vietnam is divided into 3 regions: North, Central and South. Each region has its own gastronomic characteristics, which contributes to the diversity of Vietnamese cuisine. The gastronomy of the North is characterized by the light and fine taste. The nuoc mam, a brownish sauce obtained by fermenting salted fish, is often used. The Central is known for dishes with the mam tom chua and mam ruoc. And in the South, we often favor sour and sweet dishes. The cuisine of this region has been greatly influenced by those of China, Cambodia and Thailand.
 
In Vietnamese cuisine, we also see the influences of yin-yang and the five elements (wuxing). All these factors combine and harmonize to constitute a varied Vietnamese gastronomy known in the world.
 
Attention: In Vietnam, we often use Sodium Glutamate (Mi Chinh or Bot Ngot). If you have any known food allergies or do not like it, you should require gluten-free dishes at the restaurant.
